    Thanks to NWEI for creating this EcoChallenge and encouraging us all to make baby steps toward lasting changes which protect our environment!  Even after this semester is over, I'm committed to maintain and improve my own personal habits concerning environmental protection.

    Buying in bulk at Costco and noticed they offered new paper towels made from post consumer recycled materials.  In the spirit of being green, I eagerly brought home a package of 15 rolls.  My husband was skeptical, but I insisted this was another way we could benefit the environment and save trees.  With great anticipation, I opened our first roll and set it in the kitchen.  
    All I can say is my husband was right.
    This was NOT a good purchase and is actually worse for the environment.  We are having to use more sheets to get the same job done.  They are horrible.  They look and feel like gas station bathroom paper towels.  Poorly made with very little absorbancy.  Completely underwhelmed.  Seriously unimpressed.  
    If companies are going to be truly green, make a decent product please so we can encourage more people to focus on saving the environment.  With products like this, people will avoid purchasing anything labled "green" or "made from recycled materials" and rightfully so.  This screams "cheap!"
    Very disappointed...  :(

    So cool to see all the wonderful dishes each team created!  Love all the great photography and each dish was unique - one team even created a micro greens martini!  Everything looked delicious!

    Tomorrow we get to see how everyone's micro green dishes turned out!  I'm excited to see all the interesting entrees everyone created.  So cool to know that we were able to grow our own greens.  Hopefully this experience will encourage everyone to grow other fun foods!
